The Rainbow ...so colourful !

Have you seen a rainbow recently? I haven't, despite the storms many areas of the UK experienced yesterday! There was certainly showers interspersed with a little sunshine but no rainbows that I could see! However, not to worry because we can all still enjoy rainbows and their colours, and that is not necessarily to do with the weather but vegetables!!! Yes, do read on and see how we can include the colours of the rainbow on our plates ...

'Come on now eat your greens' ... is something my Mum used to say, and sure enough there was usually at least two green vegetables on my plate, very often peas and cabbage - and I did eat them up!

Nowadays, when it comes to vegetables we could eat the colours of the rainbow, there are so many great colours to choose.

The colours of the rainbow are Red, Orange, Yellow, Green, Blue, Indigo, and Violet. So starting with Red - how about red pepper or red tomato. Moving onto Orange - how about carrot or an orange pepper. Next is yellow - so it could be butternut squash or a yellow pepper. Yes, it's Green next - so broccoli or Brussels sprouts ... now the last three colours of blue, indigo and violet may be easier to achieve if we think of them as one! Aubergine (eggplant) is a good start, followed by purple cabbage and how about purple cauliflower!

That's a beautiful rainbow picture! I eat lots of red and green, some orange but not so good on blue and purple. :)

If I ate as many raw veggies as gets pushed to the back of my small fridge, then I’d be a happy eater.
I need to add a veggie drawer and keep it on a fridge shelf.

Hi Jan, firstly, I love the rainbow illustration. Secondly, those vegetables, the rainbow of colours, look downright delicious! Hard for me to pick any favourites, but I love all the bell peppers, especially the red, orange and yellow, I love cabbage, Brussels sprouts, broccoli, tomatoes, carrots, sweet potatoes (not sure these fit your category here, but I do love them), Rutabaga (Swedish turnip), Romaine lettuce, never tried purple cauliflower, I do like eggplant, zucchini, cucumber, spinach....so I guess I love so many of them I am fortunate.

I haven't noticed any rainbows recently. I must need to spend more time outdoors.
But I do love to eat a rainbow of vegetables. Broccoli and carrots are my favourites. Xx

Mi piacere molto.

Per quanto riguarda le verdure, sicuramente in estate ne mangio più che in inverno, perché mio padre fa l'orto e tutti i giorni abbiamo qualcosa da raccogliere.

No rainbow danced across my skies,
Despite the storms and cloudy cries.
But fear not—joy is not yet dead,
The rainbow lives... upon my bread!

Well, not the bread—but on the plate,
Where veggies lie in rainbow state.
Red and orange? A tasty treat—
Tomatoes tango, carrots compete!

Yellow’s cheery, squashy delight,
While greens still haunt my dreams at night.
(“Eat your peas!” my mother said—
Her voice still echoes in my head.)

Now blue and violet, what a test—
But aubergine will do its best.
A purple cabbage twirls with flair—
A veggie waltz? I’ll see you there!

So though the rainbows hide above,
We find their magic, bite by bite, with love.
Who needs a storm to chase the glow?
Just raid the fridge and let it show!

With inflation and costs going up we can't afford a rainbow this year. We're putting up last year's one instead.

Jan, I live meters from the sea and I usually see rainbows over it. I also see it every day on my plate, as I try to have at least 5 colors of food on it. This way, I ensure that I have ingested various types of nutrients.
